Cucumber & Mint GUZPACHO
With temperatures rising in Delhi, it’s absolutely impossible to relish a hot bowl of healthy soup. The thought itself makes one cringe! However, there is an alternative which is low in calorie, low in fat yet refreshing and delicious. It’s the cold spanish soup- Guzpacho. It is basically a soup made with raw vegetables, served cold. Here’s a simple recipe of a beautiful cucumber & mint guzpacho straight from the B.FIT Kitchen.
4 peeled & de-seeded cucumbers (chopped)
2 Tbsp white distilled vinegar
1 large clove of garlic
1.5 cups green grapes
1 Tbsp home-made mint chutney or a bunch of fresh mint leaves + 1 chopped green chilli
1 cup water
1 Tbsp extra virgin olive oil
Salt to taste
In a blender add all the ingredients and blend till smooth. Add salt to taste. Strain the mix using a coarse sieve and chill.
To serve, pour the chilled guzpacho into small espresso cups or glasses. Garnish with coarsely ground almonds and a fresh mint leaf.
Savour this cold summer soup to cleanse your palette or as an excellent summer starter.
*You can pair it with whole-wheat pita crisps or a side of pan grilled chicken/fish/prawns.
