A simple, easy-to-make recipe for delicious Lemon rice.
Ingredients:
3-4 cups of boiled rice. I used leftover rice from the afternoon.
1 lemon
1 red chilli
1 tsp salt
1/2 tsp turmeric
1 tsp mustard seeds
3-4 curry leaves
1/4 tsp hing
1 Tbsp urad dal
1 tbsp chana dal
1 tbsp peanuts
Method:
Fluff up the cooked rice and add the salt, lemon juice. Give a good mix and set aside. Wash the dals (pulses) and soak them in some warm water for 5-10 minutes.
In a pan or wok, add 1 tsp Desi ghee and roast some peanuts and set them aside (I didn’t have any at home and couldn’t get because of the lockdown, so I left them out of the recipe). In a wok (you can use the same one), add the mustard seeds. Once they sputter, add the dals ( after draining the water) and cook till golden brown. Now add the chilli, curry leaves and turmeric. Now add the peanuts and the rice and give a good stir. If using leftover rice, sprinkle some water and mix. Add more salt and lemon juice if needed.
Serve hot with raita or some curry.
